This Slate article suggests you might want to listen to Ronald D. Moore's four hour recording of his writer room in action.

They're breaking story. And they're letting you listen in. You wanted to know what it's like to be in the room? This is what it's like to be in the room working on BG.

The podcasts are pretty fine, too.

I killed what would have been a dull afternoon of data entry by listening to that recording.

It does help a bit if you know the show - but they're still amazing.

You must have gotten Sci Fi's attention, because links to the Writer's Meetings have been added to the main menus for Seasons 2 and 3:
