I bought one of the DVDs a while ago and they had a fairly extensive featurette that followed an episode from concept to pitch to production. Unfortunately, they pretty much shunned the script format saying that it slowed the story revision process, and opted for a storyboard heavy process due to the large number of sight gags, short episode time, and multiple contributors.
So even if you do find some examples, I don't think they'll reflect the actual process as well as you hope.
